I have a co-worker who is acting-shall we say-interesting toward me. One day she saw me and she said,”look, I cut all my hair off.” she was telling me she got a new haircut..and one day she opened up to me about some personal issues in her life and then just yesterday she told me she just got a body piercing. What is up with this?

All these people are wrong. Okay it means nothing seriously. Gosh she is having a conversation. I do that all the time. I tell people when I got a new haircut to talk to them about something. She just wants to tell you whats going on in her life. If she is being flirty about it then she just likes you !
